- In a food processor, combine defrosted frozen peas, optional pea shoots, grated parmesan cheese, olive oil, freshly squeezed lemon juice, and half a garlic clove. Blend until a rough paste forms. Adjust seasoning with salt and black pepper, then set aside.
- Preheat your broiler or grill to high heat. Drizzle olive oil over ciabatta slices and place under the broiler for about 2-3 minutes per side until golden brown and crispy. Gently rub the remaining garlic clove on the hot bread.
