  • 1 cup Plain Greek Yogurt Nonfat recommended.
  • 2 tablespoons Freshly Squeezed Lemon Juice Adjust to taste.
  • 1 teaspoon Mustard Dijon or yellow mustard.
  • ¼ cup Extra Virgin Olive Oil Healthy fat that enriches the dressing.

Method
 

Instructions
  1. In a blender, combine Greek yogurt, lemon juice, and mustard. Add olive oil, mint, parsley, oregano, salt, and pepper. Blend until smooth, then set aside.
  2. In a large mixing bowl, add super greens and kale. Toss in strawberries, blackberries, and blueberries. Sprinkle in pistachios and pepitas.
  3. Crumble blueberry goat cheese over the salad and gently mix to combine.
  4. Drizzle dressing over the salad and toss gently to coat the ingredients.
  5. Taste and adjust seasoning. Let rest for 5 minutes before serving.
