  1. Begin by grating one cucumber and then squeezing it in a clean kitchen towel to remove excess moisture.
  2. In a medium mixing bowl, combine the grated cucumber with 1 cup of plain Greek yogurt, 2 tablespoons of chopped dill, the juice of half a lemon, 1 clove of minced garlic, and salt and pepper to taste. Mix thoroughly.
  3. Next, take 2 cups of cooked rotisserie chicken and shred it into small pieces. Add to the tzatziki mixture and fold gently.
  4. Dice a quarter of a red onion finely and add to the mixture, stirring gently to combine.
