Step‑by‑Step Instructions
  1. In a mixing bowl, whisk together almond milk, chia seeds, maple syrup, and vanilla extract until well blended.
  2. Dissolve instant coffee granules in warm water, stirring until fully dissolved. Pour this coffee mixture into the chia mixture and stir thoroughly.
  3. Mix cocoa powder with a splash of almond milk to create a smooth paste. Gradually incorporate this into half of the chia mixture.
  4. Layer the plain chia mixture and the cocoa-infused chia mixture in serving glasses.
  5. Top each layer with a dollop of Greek yogurt, a dusting of cocoa powder, and dark chocolate shavings.
  6. Cover and refrigerate for 2-4 hours or ideally overnight.
  7. Before serving, optionally sprinkle some crushed coffee beans on top for added texture.
