  • 1 can Black Beans thoroughly drained
  • 1 cup Frozen Corn can substitute with fresh corn
  • 2 cups Shredded Mexican Blend Cheese can swap with Cheddar or Monterey Jack
  • 1 bag Frozen Tater Tots crinkle-cut fries can be a substitute
  • 1 cup Red Enchilada Sauce salsa can be used for a different profile
Toppings
  • 1/2 cup Olives adds a salty bite
  • 1/4 cup Cilantro fresh herbs are ideal
  • 1 cup Sour Cream adds creaminess
  • 1 cup Diced Tomatoes for freshness and color

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a 9x13 baking dish with cooking spray.
  2. In a large skillet over medium heat, brown the ground beef for 6-8 minutes. Add diced onion and cook until translucent, about 3-4 minutes. Stir in minced garlic for 1 minute.
  3. Drain excess fat from the skillet. Add diced green chiles, taco seasoning mix, black beans, and frozen corn; stir well for 2-3 minutes. Fold in 2 cups of shredded cheese until melted.
  4. Transfer the mixture into the prepared baking dish, spreading it evenly.
  5. Arrange frozen tater tots neatly on top of the beef mixture.
  6. Drizzle red enchilada sauce over the tater tots.
  7. Bake uncovered for 30-40 minutes until tater tots are golden brown. Add remaining cheese on top during the last 2-3 minutes.
  8. Let cool for a few minutes, then garnish with olives, cilantro, sour cream, and diced tomatoes before serving.

Notes
