- Preheat your oven to 375°F (190°C) and prepare a 9x13 baking dish with cooking spray.
- In a large skillet over medium heat, brown the ground beef for 6-8 minutes. Add diced onion and cook until translucent, about 3-4 minutes. Stir in minced garlic for 1 minute.
- Drain excess fat from the skillet. Add diced green chiles, taco seasoning mix, black beans, and frozen corn; stir well for 2-3 minutes. Fold in 2 cups of shredded cheese until melted.
- Transfer the mixture into the prepared baking dish, spreading it evenly.
- Arrange frozen tater tots neatly on top of the beef mixture.
- Drizzle red enchilada sauce over the tater tots.
- Bake uncovered for 30-40 minutes until tater tots are golden brown. Add remaining cheese on top during the last 2-3 minutes.
- Let cool for a few minutes, then garnish with olives, cilantro, sour cream, and diced tomatoes before serving.
