  • 1/2 cup Red Onion Thinly sliced, soak in cold water if desired
  • 1/4 cup Fresh Mint Chopped, can substitute with basil
  • 1/2 cup Toasted Pecans Can substitute with walnuts or almonds
For the Dressing
  • 1/4 cup Olive Oil Any neutral oil can be used
  • 2 tbsp Balsamic Vinegar Red wine vinegar can be an alternative
  • 1 tbsp Honey Maple syrup as a vegan substitute
  • 1 tsp Dijon Mustard Regular mustard works too

Preparation Steps
  1. Preheat your oven to 350°F (175°C). Spread the pecans in a single layer on a baking sheet and toast them for 5–7 minutes.
  2. In a small bowl, combine the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper. Whisk until smooth.
  3. Hull and slice the strawberries, thinly slice the red onion, and chop the fresh mint leaves.
  4. In a large salad bowl, layer the mixed greens as a base and add strawberries, pecans, onion, and feta on top.
  5. Drizzle the dressing over the salad and gently toss using hands or tongs.
