  • 1 medium Onion Finely chopped.
  • 2 cloves Garlic Minced.
  • 1/4 cup Parsley Finely chopped, can use cilantro.
  • 1 tsp Ground Cumin Adjust to taste.
  • 1 tsp Ground Coriander Best used with cumin.
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Black Pepper Adjust to taste.
  • 1 tbsp Olive Oil For grilling.
For the Garlic Yogurt Sauce
  • 1 cup Plain Yogurt Can substitute with coconut yogurt.
  • 1 tbsp Lemon Juice Fresh is preferred.
  • 1 clove Optional Garlic For extra flavor.

Method
 

Step‑by‑Step Instructions
  1. In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, parsley, ground cumin, ground coriander, salt, and black pepper. Mix gently for 3-5 minutes.
  2. Wet your hands and form the mixture into elongated oval shapes, about the size of your palm, aiming for 10-12 koftas.
  3. Preheat your grill over medium-high heat and lightly brush with olive oil. Let it heat for 5 minutes.
  4. Place the kofta on the grill, cooking for about 5-7 minutes per side until golden brown and cooked through.
  5. While grilling, combine plain yogurt, lemon juice, and a pinch of salt in a small bowl. Stir until smooth; add optional minced garlic if desired.
  6. Once grilled, let the kofta rest for a couple of minutes before serving with garlic yogurt sauce.
