For the Base
  • 2 tbsp Extra Virgin Olive Oil Provides richness and a Mediterranean flavor
  • 1/2 whole Onion diced; yellow or white onions can be used
  • 3 cloves Garlic minced; fresh is best for potency
  • 1 tsp Hot Smoked Spanish Paprika adds heat and smokiness
  • 1/2 tsp Dried Thyme fresh thyme can also be substituted
  • 1/4 cup White Wine use broth for a non-alcoholic version
  • 15 oz Diced Tomatoes provides a juicy base for the stew
For the Seafood
  • 1 cup Fish Broth substitute with vegetable broth for a lighter taste
  • 1/2 tsp Saffron Threads essential for Mediterranean flavor
  • 4 pieces Cod Fillets approx. 4 oz each; can be replaced with mild white fish
  • 12 whole Raw Jumbo Shrimp peeled & deveined; adds sweet seafood flavor
  • 12 whole Fresh Mussels ensure they are cleaned properly
For the Finish
  • 2 tbsp Fresh Parsley chopped; for garnish and fresh flavor
  • pinch Sea Salt essential seasonings to enhance flavors
  • pinch Black Pepper essential seasonings to enhance flavors

Method
 

Instructions
  1. Prepare the seafood by cleaning mussels, patting cod fillets and shrimp dry, and seasoning with salt and pepper.
  2. In a large sauté pan, heat olive oil over medium-high heat and add diced onion and minced garlic, sauté for about 3 minutes.
  3. Stir in paprika and thyme, then pour in white wine and let cook for 2 minutes.
  4. Add the diced tomatoes, season with salt and pepper, and cook for another 2 minutes.
  5. Pour in the fish broth and add saffron threads, stir and bring to a gentle boil.
  6. Carefully add the cod, shrimp, and mussels; cover and cook for 5-6 minutes until mussels open.
  7. Sprinkle chopped parsley over the top and serve immediately.
