- Prepare the seafood by cleaning mussels, patting cod fillets and shrimp dry, and seasoning with salt and pepper.
- In a large sauté pan, heat olive oil over medium-high heat and add diced onion and minced garlic, sauté for about 3 minutes.
- Stir in paprika and thyme, then pour in white wine and let cook for 2 minutes.
- Add the diced tomatoes, season with salt and pepper, and cook for another 2 minutes.
- Pour in the fish broth and add saffron threads, stir and bring to a gentle boil.
- Carefully add the cod, shrimp, and mussels; cover and cook for 5-6 minutes until mussels open.
- Sprinkle chopped parsley over the top and serve immediately.
