For the Crudo
  • 8 oz Sushi-grade Salmon Ensure freshness and quality.
  • 1 piece Serrano Pepper Can substitute with jalapeños for milder taste.
  • 1 tbsp Fresh Ginger Grated.
  • 1 Lemon Use for juice and zest.
  • 1 tbsp Agave Syrup Honey is a suitable alternative.
  • 2 tbsp Tamari or Soy Sauce Use Tamari for gluten-free.
  • 1 tbsp Mirin Blend sugar and water for non-alcoholic substitute.
  • 1 tbsp Rice Vinegar
  • 1 tbsp Sesame Oil Toasted flavor.
For the Carrots
  • 2 medium Carrots Fresh, vibrant for frying.
  • 2 stalks Scallions White parts for sauce, green for garnish.
For Topping
  • 2 tbsp Salsa Macha Substitute with chili oil if necessary.
  • 1 cup Crispy Carrots Fried matchsticks.

Method
 

Preparation Steps
  1. Fry the Carrots: Heat about ¼ inch of olive oil in a large skillet over medium-high heat. Once shimmering, add thinly cut carrot matchsticks. Fry for 3-5 minutes until golden brown. Drain on paper towels.
  2. Prepare the Sauce: Whisk together scallion whites, Tamari, mirin, rice vinegar, lemon juice, ginger, sesame oil, agave syrup, minced Serrano, and Salsa Macha in a bowl. Let sit for 15-20 minutes.
  3. Prepare the Garnish: Cut green scallion parts into thin matchsticks and submerge in ice water for 10 minutes.
  4. Assemble the Plate: Strain sauce into a serving dish, arrange salmon slices over it, sprinkle crispy carrots on top, and add lemon zest and scallion greens as garnish.
  5. Serve and Enjoy: Present immediately to guests for the best flavor and texture.
