Step‑by‑Step Instructions
  1. Slice chicken breasts horizontally to create thin cutlets. Season both sides with salt and black pepper. Whisk together buttermilk and hot sauce in a bowl.
  2. Dredge each chicken cutlet in the flour mixture. Dip into the buttermilk mixture, then dredge again in the flour for a thick coating.
  3. Heat oil in a skillet over medium-high heat until 350°F. Fry chicken cutlets for about 3 minutes per side until golden brown and cooked through.
  4. Mix hot frying oil with brown sugar, chili powder, smoked paprika, and an extra dash of cayenne. Simmer until sugar dissolves and baste hot chicken with the mixture.
