- Prepare the avocado spread by mashing the avocado and mixing in herbs, garlic, lime juice, lime zest, and salt.
- To assemble, spread avocado on one half of an English muffin, top with the smoky shredded tofu, and cap with the other half.
- Wrap sandwiches tightly in parchment and foil if meal prepping, and store in the refrigerator for up to 3 days.
