  • 2 tablespoons Tamari Wheat-free for gluten-free
  • 2 tablespoons Cornstarch
  • 1 tablespoon Lime Juice and zest
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Coriander
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Allspice
  • 1/2 teaspoon White Pepper
  • 1-2 teaspoons Liquid Smoke Optional
For the Avocado Spread
  • 1 medium Avocado Mashed
  • 2 tablespoons Fresh Herbs Parsley, dill, and chives
  • 1 clove Garlic Minced
  • 1 tablespoon Lime Juice
  • 1 teaspoon Lime Zest
  • to taste Salt
For the Sandwich Base
  • 2 pieces English Muffins Whole grain or gluten-free

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Grate the super firm tofu and transfer it to a mixing bowl. Add cornstarch, smoked paprika, garlic powder, coriander, allspice, white pepper, tamari, and liquid smoke. Mix thoroughly.
  3. Spread the tofu mixture evenly on the baking sheet and bake for 25 minutes, tossing halfway through until golden and crispy.
  4. Prepare the avocado spread by mashing the avocado and mixing in herbs, garlic, lime juice, lime zest, and salt.
  5. To assemble, spread avocado on one half of an English muffin, top with the smoky shredded tofu, and cap with the other half.
  6. Wrap sandwiches tightly in parchment and foil if meal prepping, and store in the refrigerator for up to 3 days.
  7. To serve, heat the wrapped sandwich in a toaster oven or air fryer at 350°F for 5-7 minutes.
