Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine orange juice, olive oil, honey, water, and sugar until blended. Gradually add fine semolina, stirring until combined. Mix in flour, baking soda, baking powder, cinnamon, clove, nutmeg, and vanillin until a soft dough forms, about 5-7 minutes.
  2. In a saucepan, bring together sugar, honey, water, cinnamon stick, dried cloves, and orange peel over medium heat. Boil without stirring for 4 minutes until sugar dissolves. Remove from heat and cool.
  3. Preheat oven to 180°C (356°F). Take a portion of dough (40-45 grams) and roll into an oval shape. Place on a parchment-lined tray, pressing a fork on top for decoration.
  4. Bake cookies for 20-25 minutes or until golden brown. Monitor to prevent over-browning.
  5. Once baked, dip each cookie into the cooled syrup for a few seconds on each side. Transfer to a cooling rack to drain excess syrup.
