Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, drizzle olive oil and add chopped spinach. Sauté for 3-4 minutes until wilted. Let cool slightly.
  3. In a bowl, mix the wilted spinach with ricotta, Parmesan, garlic powder, salt, and pepper until creamy.
  4. Unroll the puff pastry sheets on a floured surface and cut into 4-6 squares per sheet.
  5. Place 1-2 tablespoons of filling in the center of each pastry square, fold over and seal edges with a fork.
  6. Beat the egg to create an egg wash and brush the tops of the pastries.
  7. Bake for 20-25 minutes until golden brown, ensuring they are puffed up.
