Method
 

Step-by-Step Instructions
  1. In a mixing bowl, whisk together 6 large eggs, a pinch of salt, a sprinkle of freshly cracked pepper, and a splash of milk until smooth and well combined.
  2. In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Pour in the egg mixture and gently stir with a spatula as it cooks for about 3–4 minutes.
  3. While the eggs are cooking, heat another skillet over medium heat. Add breakfast sausage links and cook for about 6–8 minutes, turning occasionally.
  4. In a clean skillet, warm it over medium heat and lightly coat with cooking spray. Let it heat for a minute or so until it’s warm.
  5. Lay a tortilla flat on a plate. In the center, spoon a generous amount of the scrambled eggs, followed by a sausage link placed lengthwise.
  6. Carefully fold in the sides of the tortilla and then roll it from the bottom up to enclose the filling snugly.
  7. Place the assembled roll-up seam-side down in the heated skillet. Cook for about 2–3 minutes until the bottom is golden brown and crispy.
  8. Continue with the remaining tortillas and filling until all ingredients are used. Allow the roll-ups to rest for a minute before slicing.
