- In a mixing bowl, whisk together 6 large eggs, a pinch of salt, a sprinkle of freshly cracked pepper, and a splash of milk until smooth and well combined.
- In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Pour in the egg mixture and gently stir with a spatula as it cooks for about 3–4 minutes.
- While the eggs are cooking, heat another skillet over medium heat. Add breakfast sausage links and cook for about 6–8 minutes, turning occasionally.
- In a clean skillet, warm it over medium heat and lightly coat with cooking spray. Let it heat for a minute or so until it’s warm.
- Lay a tortilla flat on a plate. In the center, spoon a generous amount of the scrambled eggs, followed by a sausage link placed lengthwise.
- Carefully fold in the sides of the tortilla and then roll it from the bottom up to enclose the filling snugly.
- Place the assembled roll-up seam-side down in the heated skillet. Cook for about 2–3 minutes until the bottom is golden brown and crispy.
- Continue with the remaining tortillas and filling until all ingredients are used. Allow the roll-ups to rest for a minute before slicing.
