  • 1 sheet Puff Pastry Store-bought or homemade
For the Onion Filling
  • 2 tablespoons Olive Oil
  • 1 tablespoon Butter
  • 3 medium Yellow Onions Sliced
  • 1 tablespoon Sugar
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon Balsamic Vinegar
  • handful Fresh Thyme
For the Topping
  • 4 ounces Goat Cheese Can substitute with feta or cream cheese

Method
 

Preparation
  1. Begin by heating olive oil and butter in a large skillet. Add sliced onions, sugar, salt, and pepper. Cook until golden and caramelized.
  2. While the onions caramelize, roll out the puff pastry and cut into rectangles. Preheat the oven to 400°F (200°C).
  3. Once onions are caramelized, place pastry on a baking sheet, top with onions and crumble goat cheese on top.
  4. Bake for approximately 15 minutes until golden brown.
  5. Remove from the oven, cool for 5 minutes, and serve warm.
