For the Meatballs
  • 1 lb Ground Turkey The star protein
  • 1 medium Red Onion Finely chopped
  • 1 cup Spinach Chopped, can substitute kale
  • 1 tsp Oregano Dried, or use Italian herbs
  • 1/2 cup Breadcrumbs Use gluten-free if needed
  • 1 large Egg Can substitute with flax egg for vegan option
For the Tzatziki
  • 1 cup Plain Yogurt Greek yogurt preferred
  • 1/2 medium Cucumber Grated
  • 2 cloves Garlic Minced, can use garlic powder
  • 2 tbsp Lemon Juice Freshly squeezed
For Serving
  • 4 pieces Pita Bread Use gluten-free if needed

Method
 

Step 1: Prepare the Meatball Mixture
  1. In a large bowl, mix ground turkey, red onion, spinach, oregano, breadcrumbs, and egg until blended. Form into golf ball-sized meatballs.
Step 2: Cook the Meatballs
  1. Heat olive oil in a skillet over medium heat. Sear meatballs for 6-8 minutes until golden brown and cooked through.
Step 3: Make the Tzatziki Sauce
  1. Combine yogurt, cucumber, garlic, and lemon juice in a bowl. Season to taste and let flavors meld.
Step 4: Assemble the Gyros
  1. Warm pita bread, add 2-3 meatballs to each, drizzle with tzatziki, and add toppings if desired.
