Step-by-Step Instructions
  1. Begin by heating 2 tablespoons of olive oil in a large skillet over medium heat until it shimmers.
  2. Add halved or quartered baby potatoes to the skillet, season with salt, black pepper, and paprika. Cook for about 15 minutes until golden brown and fork-tender. Remove and set aside.
  3. Season the cubed sirloin steak with salt, black pepper, and dried Italian herbs. In the same skillet, increase heat slightly, add 1 tablespoon of olive oil and 2 tablespoons of butter.
  4. Carefully add the seasoned steak cubes to the skillet. Sear for 2–3 minutes on each side until browned. Avoid overcrowding the pan.
  5. Lower heat, add remaining 2 tablespoons of butter and minced garlic. Stir until fragrant, about 1 minute.
  6. Return cooked baby potatoes to the skillet, gently toss with the garlic-butter sauce and steak. Heat for 1–2 minutes.
  7. Garnish with freshly chopped parsley and serve hot, enjoying your cozy one-pan meal.
