- Begin by heating 2 tablespoons of olive oil in a large skillet over medium heat until it shimmers.
- Add halved or quartered baby potatoes to the skillet, season with salt, black pepper, and paprika. Cook for about 15 minutes until golden brown and fork-tender. Remove and set aside.
- Season the cubed sirloin steak with salt, black pepper, and dried Italian herbs. In the same skillet, increase heat slightly, add 1 tablespoon of olive oil and 2 tablespoons of butter.
