- Brown the ground beef in a skillet over medium heat for about 5–7 minutes until browned. Drain excess fat and transfer to the crockpot.
- Sauté diced yellow onion and minced garlic in the same skillet for about 3 minutes until soft, then add to the crockpot with beef.
- Add chopped green bell pepper, drained kidney beans, diced tomatoes, and tomato sauce to the crockpot. Sprinkle the spices in.
- Gently stir to mix all ingredients, and adjust seasoning to taste.
- Cover and cook on low for 6–8 hours or on high for 3–4 hours. Stir occasionally if possible.
- Check flavors and consistency before serving. Adjust seasonings if necessary, and serve hot with desired garnishes.
