  • 1 pinch Salt Use sea salt for finer taste.
  • 2 tablespoons Olive Oil Any neutral oil can be used.

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine ground chicken, finely chopped onion, minced garlic, and fresh parsley. Add ground cumin, ground coriander, salt, and black pepper. Mix thoroughly until combined and slightly sticky. Let rest.
  2. With damp hands, shape the mixture into small oval koftas, about the size of a golf ball. Place them on a parchment-lined plate.
  3. Preheat the grill to medium-high heat, around 400°F (200°C), and lightly brush the grates with olive oil.
  4. Place the koftas on the grill and cook for 10-12 minutes, turning occasionally until golden-brown and juices run clear.
  5. In a separate bowl, combine plain yogurt, fresh lemon juice, and a pinch of salt. Whisk until smooth and creamy.
  6. Remove koftas from the grill, let rest for a few minutes, then serve with garlic yogurt sauce on the side.
