Step-by-Step Instructions
  1. In a medium saucepan, combine one cup of water, your preferred granulated sweetener, and freshly squeezed lemon juice. Stir until the sweetener dissolves, about 2-3 minutes.
  2. Add one cup of fresh or frozen blueberries to the saucepan. Simmer on low to medium heat for around 15 minutes, stirring occasionally.
  3. Mash the blueberries in the pot using a wooden spoon or potato masher for about 2-3 minutes.
  4. Increase the heat to medium and let the blueberry mixture simmer for an additional 8-10 minutes.
  5. Remove from heat and strain the mixture to separate the liquid from the blueberry pulp.
  6. Transfer the strained syrup to an airtight container and chill in the refrigerator for 1-2 hours.
  7. To serve, fill a tall glass with 3-4 ice cubes, pour in club soda until halfway full.
  8. Slowly pour in your chilled blueberry syrup to create a striking gradient.
  9. Finally, pour in half & half or coconut cream for a rich finish and top with whipped cream if desired.
