- In a medium saucepan, combine one cup of water, your preferred granulated sweetener, and freshly squeezed lemon juice. Stir until the sweetener dissolves, about 2-3 minutes.
- Add one cup of fresh or frozen blueberries to the saucepan. Simmer on low to medium heat for around 15 minutes, stirring occasionally.
- Mash the blueberries in the pot using a wooden spoon or potato masher for about 2-3 minutes.
- Increase the heat to medium and let the blueberry mixture simmer for an additional 8-10 minutes.
- Remove from heat and strain the mixture to separate the liquid from the blueberry pulp.
- Transfer the strained syrup to an airtight container and chill in the refrigerator for 1-2 hours.
- To serve, fill a tall glass with 3-4 ice cubes, pour in club soda until halfway full.
- Slowly pour in your chilled blueberry syrup to create a striking gradient.
- Finally, pour in half & half or coconut cream for a rich finish and top with whipped cream if desired.
