Preparation
- Preheat your oven to 350°F (175°C) and grease a 2-quart baking dish.
- In a large bowl, combine rolled oats, baking powder, cinnamon, and salt.
- Pour in almond milk, maple syrup, chia/flax egg, melted vegan butter, and vanilla extract, stirring until well mixed.
- In a small saucepan, melt vegan butter and maple syrup over low heat and stir in pecans.
- Pour the oatmeal mixture into the prepared baking dish and spoon the pecan topping evenly over it.
- Bake for 35-40 minutes or until golden brown and a toothpick comes out clean.
- Allow to cool for 5 minutes, then serve warm.
