Oatmeal Base
  • 2 cups Rolled Oats certified gluten-free
  • 2 teaspoons Baking Powder
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Salt
Wet Mixture
  • 2 cups Almond Milk unsweetened
  • 1/2 cup Maple Syrup
  • 1 tablespoon Chia/Flax Egg or 1 egg
  • 1/4 cup Vegan Butter or Coconut Oil
  • 1 teaspoon Vanilla Extract
Pecan Topping
  • 1 cup Pecans chopped
  • 1/4 cup Vegan Butter or Maple Syrup melted together

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 2-quart baking dish.
  2. In a large bowl, combine rolled oats, baking powder, cinnamon, and salt.
  3. Pour in almond milk, maple syrup, chia/flax egg, melted vegan butter, and vanilla extract, stirring until well mixed.
  4. In a small saucepan, melt vegan butter and maple syrup over low heat and stir in pecans.
  5. Pour the oatmeal mixture into the prepared baking dish and spoon the pecan topping evenly over it.
  6. Bake for 35-40 minutes or until golden brown and a toothpick comes out clean.
  7. Allow to cool for 5 minutes, then serve warm.
