Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, combine ground chicken, egg, breadcrumbs, Parmesan, garlic, parsley, onion powder, paprika, salt, and pepper. Mix gently until combined.
  3. Shape the mixture into golf ball-sized balls and place on a parchment-lined baking tray.
  4. Bake in the oven for 20-25 minutes or until golden brown and cooked through.
  5. In a saucepan, melt butter over medium heat, whisk in flour to make a roux, then gradually add milk while whisking to create a smooth sauce.
  6. Stir in Parmesan and mozzarella cheeses, salt, pepper, and nutmeg until melted and creamy.
  7. Transfer baked bombs to a dish, pour sauce over, and broil for 3-5 minutes until bubbly.
  8. Serve on mashed potatoes or cauliflower purée, garnished with herbs.
