- Carefully remove any outer wilted leaves from the cabbage head and slice it into thick ¾-inch rounds.
- In a small bowl, combine the olive oil, garlic powder, smoked paprika, onion powder, thyme, salt, and black pepper. Whisk until well blended.
- Generously brush the seasoning mixture onto both sides of each cabbage steak for an even coat.
- Arrange the cabbage steaks on the lined baking sheet in a single layer and roast for 25–30 minutes, flipping halfway through.
