Ingredients
  

For the Lasagna
  • 9 sheets Lasagna Noodles Use gluten-free lasagna noodles as a substitute.
  • 2 tablespoons Olive Oil For sautéing vegetables.
  • 1 medium Onion Cook until translucent.
  • 2 cloves Garlic Minced, add towards the end of onion cooking.
  • 8 ounces Mushrooms Slice; substitute with cauliflower or eggplant.
  • 1 teaspoon Dried Thyme Can substitute with Italian seasoning.
  • to taste Salt
  • to taste Pepper
  • 6 ounces Fresh Spinach Must be wilted before adding.
For the Cheese Mixture
  • 15 ounces Ricotta Cheese Mix with herbs for extra flavor.
  • 8 ounces Mozzarella Cheese Melts beautifully; add extra for more cheesiness.
  • 1/2 cup Parmesan Cheese Optional but recommended.
For the Sauce
  • 2 cups Marinara Sauce Use store-bought for convenience.

  • Large pot
  • Large skillet

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Cook lasagna noodles in salted boiling water until al dente, about 8-10 minutes. Drain and set aside.
  3. In a skillet, heat olive oil and sauté onions until translucent. Add minced garlic and slice mushrooms with thyme, salt, and pepper. Cook for about 5-7 minutes. Stir in fresh spinach until wilted.
Assembly and Cooking
  1. Spread marinara sauce on the bottom of the greased baking dish. Layer with noodles, half ricotta, half mushroom-spinach mix, and mozzarella. Repeat layers and finish with mozzarella on top.
  2. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until bubbly and golden.
  3. Let the lasagna cool for 10 minutes before slicing. Garnish with fresh basil before serving.
