Preparation
- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- Cook lasagna noodles in salted boiling water until al dente, about 8-10 minutes. Drain and set aside.
- In a skillet, heat olive oil and sauté onions until translucent. Add minced garlic and slice mushrooms with thyme, salt, and pepper. Cook for about 5-7 minutes. Stir in fresh spinach until wilted.
Assembly and Cooking
- Spread marinara sauce on the bottom of the greased baking dish. Layer with noodles, half ricotta, half mushroom-spinach mix, and mozzarella. Repeat layers and finish with mozzarella on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until bubbly and golden.
- Let the lasagna cool for 10 minutes before slicing. Garnish with fresh basil before serving.
