Step-by-Step Instructions for Mozzarella Stuffed Meatloaf
  1. Preheat your oven to 375°F (190°C). Line a sheet pan with foil or parchment paper and spray lightly with non-stick spray.
  2. In a medium bowl, combine the thawed, well-drained chopped spinach with shredded mozzarella cheese. Mix until the spinach is coated.
  3. In a large mixing bowl, combine the lean ground turkey, Italian bread crumbs, beaten egg, milk, Italian seasoning, kosher salt, and ground black pepper. Mix until just combined.
  4. Shape about two-thirds of the turkey mixture into a loaf (about 9"x5") on the prepared sheet pan, creating a hollow space in the center.
  5. Spoon the spinach and mozzarella mixture into the center, pressing down gently. Cover it completely with the remaining turkey mixture, sealing well.
  6. Press the edges together to seal and shape the top of the meatloaf for even cooking.
  7. Bake in the preheated oven for 40 minutes. Remove briefly, add marinara sauce, and return to bake for an additional 15 minutes until the internal temperature reaches 165°F.
  8. Let the meatloaf rest for 5-10 minutes before slicing. Garnish with fresh basil and grated parmesan.
