  • 1 tbsp apricot or orange jam adjust consistency with warm water if needed

Yogurt Cake Instructions
  1. Preheat your oven to 350°F (180°C) and position the oven rack in the middle.
  2. Grease a 9x5 inch loaf pan with vegetable oil or line with parchment paper.
  3. Whisk together the eggs and sugar until frothy, about 1-2 minutes.
  4. Incorporate the vegetable oil, lemon zest, and vanilla essence into the egg mixture.
  5. Mix in the yogurt until uniformly combined.
  6. Combine flour, baking powder, and salt in a separate bowl, then gently fold into the wet mixture.
  7. Pour the batter into the prepared pan, smoothing the top.
  8. Bake for 35-40 minutes, checking for doneness at the 35-minute mark.
  9. Cool the cake in the pan for 10 minutes, then transfer to a wire rack.
  10. Optional: Brush a warm glaze over the cooled cake for a shiny finish.
