Preparation Steps
- Preheat the oven to 350°F (175°C) and grease a muffin tin with nonstick cooking spray.
- In a large mixing bowl, combine ground beef, minced onion, eggs, breadcrumbs, Worcestershire sauce, pepper, seasoning salt, garlic powder, and ½ cup of ketchup. Mix gently until combined.
- Spoon the meat mixture evenly into the muffin tin, filling each compartment to three-quarters full.
- In a small bowl, mix the remaining ¼ cup of ketchup with brown sugar and mustard. Spoon this topping over each meatloaf.
- Place the muffin tin in the oven and bake for 30 minutes, checking for an internal temperature of 160°F (70°C).
- Remove the mini meatloaves from the oven and let them cool in the tin for about 5 minutes before serving.
