For the Meat Mixture
  • 1 pound Ground Beef or ground turkey for a healthier option
  • 1 cup White Onion finely minced
  • 2 large Eggs or flaxseed mixture for vegan
  • 1 cup Breadcrumbs or pork panko for low-carb
  • 2 tablespoons Worcestershire Sauce or soy sauce as an alternative
  • 1 teaspoon Pepper to taste
  • 1 teaspoon Seasoning Salt to taste
  • 1 teaspoon Garlic Powder or fresh garlic
For the Topping
  • ¾ cup Ketchup divided; can swap with BBQ sauce
  • 2 tablespoons Brown Sugar or coconut sugar
  • 1 tablespoon Mustard Dijon or yellow

Method
 

Preparation Steps
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin with nonstick cooking spray.
  2. In a large mixing bowl, combine ground beef, minced onion, eggs, breadcrumbs, Worcestershire sauce, pepper, seasoning salt, garlic powder, and ½ cup of ketchup. Mix gently until combined.
  3. Spoon the meat mixture evenly into the muffin tin, filling each compartment to three-quarters full.
  4. In a small bowl, mix the remaining ¼ cup of ketchup with brown sugar and mustard. Spoon this topping over each meatloaf.
  5. Place the muffin tin in the oven and bake for 30 minutes, checking for an internal temperature of 160°F (70°C).
  6. Remove the mini meatloaves from the oven and let them cool in the tin for about 5 minutes before serving.

Notes
