Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather ingredients and prepare vegetables while the oven warms.
  2. Slice the zucchini, eggplant, bell peppers, and onion into bite-sized pieces. Toss with olive oil, garlic, herbs, salt, and pepper.
  3. Spread the mixture on a baking sheet and roast for 20-25 minutes until tender and caramelized.
  4. Roll out the puff pastry on a floured surface to form a 12-inch circle and chill while vegetables cool.
  5. Arrange roasted vegetables in the center of the pastry, leaving a 2-inch border, and fold edges over the filling.

  7. Bake the galette for 30-35 minutes until golden and puffed up.
