For the Vegetables

For the Mayo

Method
 

Instructions
  1. Season each chicken breast with salt, pepper, and fresh herbs. Let rest for 10 minutes.
  2. Cook bacon in a skillet over medium heat for 6-8 minutes until crispy, then drain on paper towels.
  3. Grill chicken in reserved bacon fat over medium-high heat for 6-7 minutes per side until golden brown.
  4. Mix mayonnaise, minced garlic, and herbs in a bowl, seasoning to taste for the garlic herb mayo.
  5. Toast bread in a broiler or grill pan until golden brown, about 2-3 minutes per side.
  6. Assemble sandwich with mayo on bread, then layer lettuce, tomatoes, chicken, and bacon.
