Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry to about ¼ inch thickness and cut into four equal squares.
  3. In a mixing bowl, combine softened cream cheese, powdered sugar, vanilla extract, lemon juice, and lemon zest until smooth.
  4. Place a tablespoon of the cream cheese filling in the center of each pastry square and top with fresh raspberries.
  5. Fold the corners of each pastry square toward the center to create a pocket and seal well.
  6. Beat the egg and brush the tops of the pastries for a golden finish.
  7. Bake for 15-20 minutes or until puffed and golden-brown, then cool for 5-10 minutes before serving.
