  3. In a large bowl, combine cane sugar with lemon zest and massage until fragrant.
  4. Add Greek yogurt, olive oil, eggs, and vanilla extract to the mixture, whisking until smooth.
  5. Stir in the dry ingredients gently until just combined.
  6. Fold in blueberries gently until evenly distributed.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 40-50 minutes until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes then transfer to a wire rack. Drizzle optional glaze if desired.
