Ingredients
  

For the Meatloaf
  • 2 lbs Ground Beef Use 80/20 for moisture and flavor
  • 1 cup Yellow Onion Diced
  • 1 cup Fine Breadcrumbs Fresh, soaked in milk
  • 2 large Eggs Lightly beaten
  • 1/2 cup Milk Whole or 2% for soaking breadcrumbs
  • 1 tsp Salt Kosher salt preferred
  • 1/2 tsp Ground Pepper Adjust to taste
For the Glaze
  • 1 cup Ketchup Star of the show
  • 1/4 cup Brown Sugar Adjust for sweetness
  • 2 tbsp Yellow Mustard Dijon works well too

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and prepare a baking dish with parchment paper.
  2. In a mixing bowl, combine the ground beef, yellow onion, breadcrumbs, eggs, and soaked milk. Season with salt and pepper, and mix gently.
  3. Shape the mixture into a loaf and place it in the prepared baking dish.
  4. In a separate bowl, whisk together ketchup, brown sugar, and mustard. Spread glaze over the meatloaf.
  5. Bake for 55-70 minutes until the internal temperature reaches 160°F (71°C).
  6. Allow the meatloaf to rest for about 10 minutes before slicing and serving.
