Step-by-Step Instructions
  1. In a large bowl, combine chicken thighs with salt, garlic powder, sweet paprika, curry powder, and Greek yogurt. Let marinate for at least 15 minutes.
  2. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Cook the marinated chicken thighs for 8-10 minutes until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, reduce heat to medium and add 2 tablespoons of butter. Add chopped garlic and onions, sauté for 3-4 minutes until translucent.
  4. Pour in 1 cup of tomato sauce and sprinkle in 1 tablespoon of sugar. Allow to simmer for 2-3 minutes to thicken.
  5. Return the chicken to the skillet and add 1 cup of heavy cream. Stir until chicken is coated and sauce is vibrant.
  6. Add cayenne pepper, 1 teaspoon of garam masala, and a dash of black pepper. Simmer on low heat for an additional 10 minutes.
  7. Stir in the remaining 2 tablespoons of butter just before serving for a glossy finish.
  8. Serve warm over basmati rice or naan, garnished with parsley or cilantro.
