Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 loaf pan with oil or line it with parchment paper.
  2. In a large mixing bowl, mash 3 ripe bananas with a fork until smooth and creamy.
  3. Add 1/4 cup of smooth peanut butter and 1 teaspoon of vanilla extract to the mashed bananas, then stir until combined.
  4. Fold in 1 1/4 cups of instant oats, 1/4 teaspoon salt, and 1/2 teaspoon baking powder, mixing until just combined.
  5. Gently fold in 1/2 cup of chocolate chips, reserving some for topping if desired.
  6. Pour the mixture into the prepared loaf pan, smoothing the top with a spatula. Sprinkle reserved chocolate chips on top if using.
  7. Bake for 25-30 minutes until the top is golden brown and a toothpick inserted comes out clean.
