  • 14-16 pounds Whole Turkey Make sure it’s thoroughly defrosted for even cooking.
  • to taste Salt Use sea salt for a fine touch.

For the Garlic Herb Butter
  • 1 cup Unsalted Butter Softened; opt for high-quality butter for the best results.
  • 1 tablespoon Fresh Sage Finely chopped; dried sage can substitute in a pinch.
  • 1 tablespoon Fresh Thyme Finely chopped; swap with dried thyme if fresh is unavailable.
  • 1 tablespoon Fresh Rosemary Finely chopped; dried rosemary works too.
  • 4 cloves Garlic Minced; add more if you adore garlic!
For Stuffing
  • 1 Lemon Halved; can use orange for a sweeter twist.
  • a few Additional Fresh Herbs Sage, thyme, and rosemary for stuffing the cavity.
  • 1 Head Garlic Broken into cloves; optional for extra flavor inside the turkey.

Method
 

Step-by-Step Instructions
  1. Start by taking your whole turkey and unsalted butter out of the fridge about 1 hour before you cook. Preheat your oven to 450°F and pat the turkey dry.
  2. In a mixing bowl, combine softened unsalted butter, chopped sage, thyme, rosemary, and minced garlic. Season with salt and pepper to taste until smooth.
  3. Once the turkey is dry, season inside and outside generously with sea salt and fresh pepper. Stuff the cavity with halved lemon, additional herbs, and broken garlic cloves.
  4. Rub the garlic herb butter over the entire surface of the turkey, ensuring to cover thoroughly except for the bottom.
  5. Place the turkey on a rack in a roasting pan, and once ready, reduce oven temperature to 350°F and roast.
  6. Roast for about 3 hours, ensuring to check the skin during the last hour. An instant-read thermometer should read 165°F at the thickest part of the thigh.
  7. Carefully remove the turkey from the oven and allow to rest for about 20 minutes before carving.
