Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Blend Greek yogurt, cream cheese or silken tofu, salt, vanilla extract, lemon juice, maple syrup, and cornstarch until smooth.
  3. For a crust, mix graham cracker crumbs with melted butter and press into a pan; bake for 10 minutes.
  4. Pour the cheesecake mixture into the prepared crust or a springform pan.
  5. Bake for approximately 50 minutes until edges are set and the center is slightly jiggly.
  6. Allow cheesecake to cool for about an hour at room temperature.
  7. Chill in the refrigerator for at least 6-8 hours.
  8. Slice and serve, adding toppings if desired.
