- Preheat the oven to 425°F (220°C). Gather ingredients and equipment, including a large mixing bowl and a baking sheet lined with parchment paper.
- Wash and peel the carrots, then cut them into 1/2 inch thick sticks.
- In a bowl, combine melted butter, honey, minced garlic, salt, and pepper to form a glaze.
- Add the carrot sticks to the glaze and toss until they are evenly coated.
- Spread the coated carrots on the baking sheet in a single layer.
- Roast in the oven for 20-25 minutes, tossing halfway through.
- Optionally garnish with fresh herbs before serving.
