  • 2 cups Spinach Fresh or frozen both work well.
For the Cheese Mixture
  • 15 oz Ricotta Cheese Cottage cheese can replace ricotta for more protein.
  • 1 Egg Acts as a binder for the ricotta mixture.
  • 1 tsp Garlic Powder Fresh garlic can be used for a stronger flavor.
  • 1 tsp Italian Seasoning
  • 1 tsp Salt Adjust seasoning to taste.
  • 1 tsp Pepper Adjust seasoning to taste.
  • 1/2 cup Parmesan Cheese Optional but recommended for extra flavor.
  • 2 cups Mozzarella Cheese

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a greased baking dish.
  2. Sauté diced bell peppers and spinach in a skillet with olive oil for 5-7 minutes.
  3. In a mixing bowl, combine ricotta cheese, egg, garlic powder, Italian seasoning, salt, and pepper.
  4. Spread a thin layer of the ricotta mixture on the bottom of the baking dish.
  5. Add layers of zucchini or gluten-free noodles, sautéed vegetables, and mozzarella cheese.
  6. For the last layer, sprinkle remaining mozzarella and optional parmesan cheese on top.
  7. Cover the baking dish with foil and bake for 25 minutes, then uncover and bake for an additional 10-15 minutes.
  8. Let the lasagna rest for about 10 minutes before serving, and garnish with fresh herbs if desired.
