Cooking Steps
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add the diced sweet potatoes with a pinch of salt and pepper. Sauté for about 8 minutes.
- Pour in 3-4 tablespoons of water, cover, and steam the sweet potatoes for about 4 minutes.
- Stir in the diced green chiles, black beans, brown rice, chili powder, cumin, oregano, smoked paprika, garlic powder, and salsa. Mix thoroughly for about 2 minutes.
- Add lime juice and cilantro to the skillet, and adjust seasoning with salt and pepper.
- Sprinkle shredded cheese over the skillet contents, cover, and cook for an additional 3–4 minutes until cheese is melted.
- Remove from heat and serve hot, garnished with extra cilantro and your favorite toppings.
