Cooking Steps
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  2. Add the diced sweet potatoes with a pinch of salt and pepper. Sauté for about 8 minutes.
  3. Pour in 3-4 tablespoons of water, cover, and steam the sweet potatoes for about 4 minutes.
  4. Stir in the diced green chiles, black beans, brown rice, chili powder, cumin, oregano, smoked paprika, garlic powder, and salsa. Mix thoroughly for about 2 minutes.
  5. Add lime juice and cilantro to the skillet, and adjust seasoning with salt and pepper.
  6. Sprinkle shredded cheese over the skillet contents, cover, and cook for an additional 3–4 minutes until cheese is melted.
  7. Remove from heat and serve hot, garnished with extra cilantro and your favorite toppings.
