  • 1 cup Feta Cheese or goat cheese, vegan cheese
  • 1/4 cup Parsley or basil, dill
  • 1 tablespoon Mint optional
For the Dressing
  • 3 tablespoons Extra Virgin Olive Oil or any light oil
  • 2 tablespoons Lemon Juice or vinegar
  • 2 cloves Garlic or garlic powder
  • 1 teaspoon Dried Oregano or Italian seasoning
  • to taste Salt
  • to taste Black Pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prick sweet potatoes with a fork and bake for 40 to 50 minutes until fork-tender.
  3. In a bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, olives, feta, parsley, and mint.
  4. In another bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper, then pour over the filling.
  5. Fluff the baked sweet potatoes, slice them open, and fill them with the mixture.
  6. Serve immediately with optional extra feta or oil drizzled on top.
