Step-by-Step Instructions
  1. Start by preparing your corn for the Easy Traditional Corn Dip Recipe. If using fresh corn, carefully cut the kernels off the cob and set them aside. For canned corn, drain and rinse it to remove excess sodium. If using frozen corn, ensure it’s thawed and drained of excess moisture. Consider roasting the fresh corn for 5–7 minutes for added depth of flavor.
  2. In a large mixing bowl, combine 1 cup of sour cream, ½ cup of mayonnaise, and 8 ounces of softened cream cheese. Using a hand mixer, blend these ingredients on medium speed until the mixture is smooth and creamy, approximately 2–3 minutes. Scrape down the sides of the bowl for uniform mixing.
  3. Once your base is smooth, fold in 1 cup of shredded cheddar cheese and ½ cup of pepper jack cheese if desired, followed by 1 teaspoon each of garlic powder, onion powder, smoked paprika, chili powder, salt, and black pepper. Mix gently with a spatula.
  4. Gently mix in the prepared corn, ¼ cup of chopped green onions, ½ cup of diced red bell pepper, and optionally, 1 finely chopped jalapeño. Stir carefully to maintain the structure of your dip.
  5. To enhance the flavors, chill or heat the dip. For a cold dip, cover and refrigerate for at least 30 minutes. Alternatively, for a warm dip, preheat your oven to 375°F (190°C), transfer the mixture to a baking dish, sprinkle with extra cheese, and bake for 20-25 minutes until bubbling.
