- Start by preparing your corn for the Easy Traditional Corn Dip Recipe. If using fresh corn, carefully cut the kernels off the cob and set them aside. For canned corn, drain and rinse it to remove excess sodium. If using frozen corn, ensure it’s thawed and drained of excess moisture. Consider roasting the fresh corn for 5–7 minutes for added depth of flavor.
- In a large mixing bowl, combine 1 cup of sour cream, ½ cup of mayonnaise, and 8 ounces of softened cream cheese. Using a hand mixer, blend these ingredients on medium speed until the mixture is smooth and creamy, approximately 2–3 minutes. Scrape down the sides of the bowl for uniform mixing.
- Once your base is smooth, fold in 1 cup of shredded cheddar cheese and ½ cup of pepper jack cheese if desired, followed by 1 teaspoon each of garlic powder, onion powder, smoked paprika, chili powder, salt, and black pepper. Mix gently with a spatula.
