- In a small bowl, combine the whipped cream cheese, finely chopped green onion tops, and lemon zest. Mix until smooth and well-combined. Set aside.
- Lay out a large piece of plastic wrap, approximately 18 inches long. Sprinkle a thin layer of Everything But The Bagel Seasoning onto the wrap.
- Arrange overlapping slices of smoked salmon in a rectangle, about 12 inches wide.
- Spread the cream cheese filling evenly over the salmon, leaving about an inch around the edges. Place thin strips of Persian cucumber and avocado in the center.
- Using the plastic wrap, carefully roll the salmon over the filling while applying gentle pressure to maintain a tight roll.
- Wrap the roll tightly in plastic wrap and place it in the freezer for 5-10 minutes to firm up.
- Once firm, remove the wrap and slice the roll into 1-inch thick slices.
- Arrange the sliced rolls on a serving platter. Serve as is or with optional citrus soy sauce.
