  • 1 tablespoon Olive Oil reduce to lower fat
  • 1 medium Onion yellow or white
  • 2 cloves Garlic minced
  • 2 tablespoons Parsley freshly chopped
For the Broth
  • 1 can Diced Tomatoes fresh is ideal
  • 2 tablespoons Tomato Paste can be omitted
  • ½ cup White Vermouth or White Wine vegetable broth with lemon juice if unavailable
  • 1 can Canned Baby Clams optional
  • 1 cup Clam Juice purchase canned if clams are omitted
For the Seafood
  • 1 pound Shrimp main protein, can substitute with scallops
  • 1 pound Cod Fillets can be replaced with tilapia or haddock
For Seasoning
  • to taste Salt
  • to taste Pepper
  • a few dashes Tabasco adjust based on preference

Method
 

Step-by-Step Instructions for Easy Seafood Stew
  1. Heat 1 tablespoon of olive oil in a large Dutch oven over medium heat. Add a chopped yellow onion and sauté for about 4 minutes until fragrant and translucent.
  2. Incorporate minced garlic and freshly chopped parsley into the pot, and sauté for an additional 2 minutes.
  3. Stir in 2 tablespoons of tomato paste until well incorporated. Cook for 1-2 minutes until it caramelizes slightly.
  4. Pour in 1 can of diced tomatoes, 1 cup of clam juice, and ½ cup of white vermouth or white wine. Bring to a boil, then simmer for 10 minutes.
  5. Raise the heat slightly and gently add 1 pound of cod fillets cut into bite-sized pieces. Cook for about 5 minutes until the fish is opaque.
  6. Fold in 1 pound of shrimp and any optional canned baby clams. Cook for an additional 5 minutes until the shrimp turns pink.
  7. Taste and season your Easy Seafood Stew with salt, pepper, and a few dashes of Tabasco. Serve hot with crusty bread or over rice.
