  • 1/2 cup Vegan Butter Consider chilling it before mixing
  • 1 cup Chocolate Chips Use dairy-free chocolate chips
  • 1/2 cup Cane Sugar Replacement with coconut sugar enhances flavor
  • 1/4 cup Plant Milk Any plant-based milk will do
  • 1 cup All-Purpose Flour Do not overmix to keep cookies soft

Method
 

Preparation and Baking
  1. Preheat your oven to 350°F (180°C) and line an 8x8-inch baking dish with parchment paper.
  2. In a microwave-safe bowl, melt vegan butter and chocolate chips in 30-second intervals, stirring in between.
  3. Combine flax meal with plant milk in a separate bowl and let it thicken for 5-10 minutes.
  4. Sift together flour, cocoa powder, baking powder, and salt into the chocolate mixture, folding in the thickened flax mixture until just combined.
  5. Pour the brownie batter into the prepared baking dish and spread evenly.
  6. Melt more vegan butter and mix with sugars, plant milk, and sift in remaining dry ingredients for the cookie layer.
  7. Spoon dollops of cookie dough over the brownie layer and gently spread evenly.
  8. Cover and bake for 20 minutes, remove foil, and bake for an additional 15-20 minutes, checking for doneness.
  9. Let cool for 15-20 minutes before lifting out and slicing into squares.
