Preparation and Baking
- Preheat your oven to 350°F (180°C) and line an 8x8-inch baking dish with parchment paper.
- In a microwave-safe bowl, melt vegan butter and chocolate chips in 30-second intervals, stirring in between.
- Combine flax meal with plant milk in a separate bowl and let it thicken for 5-10 minutes.
- Sift together flour, cocoa powder, baking powder, and salt into the chocolate mixture, folding in the thickened flax mixture until just combined.
- Pour the brownie batter into the prepared baking dish and spread evenly.
- Melt more vegan butter and mix with sugars, plant milk, and sift in remaining dry ingredients for the cookie layer.
- Spoon dollops of cookie dough over the brownie layer and gently spread evenly.
- Cover and bake for 20 minutes, remove foil, and bake for an additional 15-20 minutes, checking for doneness.
- Let cool for 15-20 minutes before lifting out and slicing into squares.
