- In a medium mixing bowl, peel and mash one ripe avocado until smooth and creamy. Add one egg and one cup of shredded mozzarella cheese. Blend until fully combined.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Form the avocado mixture into approximately 4 patties and place them on the baking sheet. Optionally sprinkle with everything bagel seasoning or salt. Bake for 20 minutes.
- For air fryer baking, preheat the air fryer to 400°F (200°C). Shape the mixture into 2-3 patties and place them in the air fryer basket. Cook for about 20 minutes.
- Let the avocado bread cool on a wire rack for a few minutes to solidify. Serve warm, toasted or with favorite toppings.

Store leftover avocado bread wrapped in plastic wrap or aluminum foil in the refrigerator for up to 4-5 days. For longer storage, freeze in zip-type bags for up to 2 months.
