  • 2 tablespoons Olive oil or avocado oil
  • 1 teaspoon Garlic powder fresh minced garlic works well too
  • 1 teaspoon Cumin or coriander
  • 1 teaspoon Chili powder adjust to preferred spice level
  • 1 teaspoon Salt sea salt or kosher salt
  • 1 teaspoon Pepper freshly ground black recommended
For the Sauce
  • 1 cup Sour cream or Greek yogurt
  • 2 tablespoons Mayonnaise can replace with vegan alternative
  • 1 tablespoon Sriracha adjust based on spice preferences
  • 2 tablespoons Fresh lime juice or lemon juice
For the Tacos
  • 8 pieces Corn tortillas or flour if preferred
  • 2 cups Red cabbage or green cabbage
  • 1 cup Tomato or diced avocado
  • 1 cup Cotija cheese or feta cheese
  • 4 wedges Lime for serving

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with foil or parchment paper.
  2. Place the tilapia fillets on the prepared baking sheet. Drizzle with olive oil, then sprinkle with garlic powder, cumin, chili powder, salt, and pepper. Rub seasonings into the fish.
  3. Slide the baking sheet into the preheated oven and bake the tilapia for 20-25 minutes until opaque and flaky.
  4. Prepare the sauce by whisking together sour cream, mayonnaise, Sriracha, and lime juice until smooth. Chill in the refrigerator.
  5. Once the fish has finished baking, let it cool slightly and break it into smaller pieces. Assemble tacos with tortillas, tilapia, cabbage, tomato, cheese, and drizzle with sauce.
  6. Serve with lime wedges on the side and enjoy fresh!
