Preparation Steps
  1. Step 1: In a medium bowl, whisk together olive oil, garlic powder, oregano, paprika, salt, and pepper until combined. Add chicken breasts and coat well. Cover and refrigerate for at least 30 minutes.
  2. Step 2: Prepare rice or quinoa according to package instructions.
  3. Step 3: In a mixing bowl, combine Greek yogurt, minced garlic, lemon juice, and dill. Stir until creamy, season with salt to taste.
  4. Step 4: Preheat air fryer to 380°F. Cook marinated chicken for about 7 minutes, flip and cook for another 3-4 minutes until internal temp reaches 165°F.
  5. Step 5: Let chicken rest for 5 minutes before slicing. In bowls, layer grains, fresh vegetables, and sliced chicken. Drizzle with tzatziki and olive oil or lemon juice.
