- Preheat your oven to 350°F (175°C).
- Lightly spray a 9x6 (or 9x11) baking dish with cooking spray.
- Tear the croissants in half and arrange them cut-side up in the prepared baking dish.
- Cut the ham into thirds and distribute it evenly around the croissants, and sprinkle cheese over the top.
- In a separate bowl, whisk together the eggs, half and half or milk, Dijon mustard, and a pinch of salt until smooth.
- Cover the dish with foil and refrigerate for at least 30 minutes or overnight.
- Remove the casserole from the refrigerator and bake it covered for 20 minutes, then bake uncovered for an additional 10-15 minutes.
- Let the casserole rest for about 5 minutes before serving, sprinkle with powdered sugar if desired.
