Step-by-Step Instructions for Berry Oat Bars
- Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan with coconut oil or line it with parchment paper.
- In a large mixing bowl, combine 1 cup of all-purpose flour (or gluten-free substitute), 2 cups of quick oats, 1 teaspoon of baking powder, and a pinch of salt. Stir until well combined.
- Add in 1/2 cup of melted coconut oil, 1/2 cup of maple syrup, and 1/4 cup of coconut sugar to the dry mixture. Mix until fully blended into a consistent dough.
- Press about two-thirds of the mixture into the bottom of your greased baking pan to create a solid base.
- Spread 1/2 cup of raspberry preserves over the pressed oat mixture, leaving a small border around the edges.
- Crumble the remaining oat mixture over the raspberry preserves and gently press down to help it adhere.
- Bake in the preheated oven for 25-30 minutes until golden brown on top.
- Allow the pan to cool for about 10-15 minutes, then transfer to a wire rack and cool completely before slicing.
