Step-by-Step Instructions for Berry Oat Bars
  1. Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan with coconut oil or line it with parchment paper.
  2. In a large mixing bowl, combine 1 cup of all-purpose flour (or gluten-free substitute), 2 cups of quick oats, 1 teaspoon of baking powder, and a pinch of salt. Stir until well combined.
  3. Add in 1/2 cup of melted coconut oil, 1/2 cup of maple syrup, and 1/4 cup of coconut sugar to the dry mixture. Mix until fully blended into a consistent dough.
  4. Press about two-thirds of the mixture into the bottom of your greased baking pan to create a solid base.
  5. Spread 1/2 cup of raspberry preserves over the pressed oat mixture, leaving a small border around the edges.
  6. Crumble the remaining oat mixture over the raspberry preserves and gently press down to help it adhere.
  7. Bake in the preheated oven for 25-30 minutes until golden brown on top.
  8. Allow the pan to cool for about 10-15 minutes, then transfer to a wire rack and cool completely before slicing.
