  • 1 cup graham crackers or favorite dry cookies
  • 1/4 cup unsalted butter melted
  • 2 tablespoons maple syrup or honey
For the Filling
  • 2 cups cottage cheese at least 2% fat
  • 1 cup Greek yogurt 5% fat
  • 3 eggs room temperature
  • 1/4 cup cornstarch or all-purpose flour
  • 1 teaspoon vanilla extract pure
  • 2 tablespoons lemon juice

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 320°F (160°C) and prepare a 9-inch springform mold by greasing it or lining it with parchment paper.
  2. Combine graham crackers, melted butter, and maple syrup/honey in a food processor and blend until fine crumbs.
  3. Press the crumb mixture into the prepared mold and bake for about 20 minutes until lightly golden.
  4. Blend cottage cheese, Greek yogurt, maple syrup, eggs, cornstarch/flour, vanilla, and lemon juice until smooth.
  5. Pour the filling over the crust and smooth the top.
  6. Bake for 40-45 minutes until the edges are set with a slight jiggle in the center.
  7. Cool at room temperature for an hour, then cover and refrigerate for at least 8 hours before serving.
